How to Make an Authentic Masala Chai
After five years of going out for chai, I finally cracked the case of the perfect masala chai after a bit of experimentation. The secret? Loads of tea leaves and loads of sugar!
Ingredients
- Ginger
- Cloves
- Cardamom
- Cinnamon stick
- Mortar and pestle
- Water
- Indian black tea
- Milk
- Brown sugar
- Fine mesh tea strainer
- Milk biscuits
Recipe
- Take a bit (5g) ginger, two cloves, three cardamom and a stick of cinnamon in a mortar and pestle
- Crush and grind it until the spices become a fragrant paste (masala)
- Pour one cup (180g) of water into a pot and bring it to boil
- Add two spoons (8.5g) of black tea leaves and the masala to the boiling water
- Boil for five minutes
- Add two cups (300g) of milk and four spoons (15g) of brown sugar
- Simmer for 5 minutes
! Warning: The milk tends to expand and if left unattended, could end up all over your stove top. Take the pot off the heat when the chai starts rising.
- Pour the chai into a big enough cup through a fine mesh tea strainer
- Pour the contents back and forth between the bigger cup and a smaller serving cup
- Serve and enjoy with a biscuit or two
